Late Lunch

Had a lunch date with J on Sunday, only problem is we turned up 24 hours late and it takes 3 hours to stoke up her pizza oven.

SHIT!

Never mind. We ate one left over vegetarian pizza, hot chips and my baked cheesecake. Oh, and drank a bucket of champagne.

Easiest cheesecake in the history of the free world.

Add a packet of crushed sweet biscuits with 125 gms of melted butter - push into the bottom of a greased spring form cake tin (up the sides too, and not too firm).

Mix 500 gms of light cream cheese with 4 eggs, 3/4 cup of caster sugar, a teaspoon of vanilla essence and a splash of lemon juice until combined. Pour this into the base and whack it in an oven at 180C for 40 minutes.

Cool that baby down, put some berries on top and hey presto!

J has one of the cutest, coolest houses of all time.

I'm expecting the bequeathment of this sideboard.

Her husband put in this old oven for Christmas. She actually uses it.

Now that is a serious foody.

Had to pull together the school Easter hampers with some of the school mums.

We managed with the help of some champers, baked Camembert and a stolen box of Roses.

We roll old school.

It's going to 21C for 7 days straight so I'll be channeling some Kate, which is appropriate given she'll be dropping by in a few days.

I might whip her up a baked cheesecake.
